COUNTRY RECIPE
Clear Lake Salad
Pears and walnuts are two of the other agricultural
specialties of the Clearlake area besides wine grapes. Visiting
with the friendly staff at Steele Winery in
Kelseyville, home of the Steele and Shooting Star brands,
this Clear Lake Salad recipe came up in conversation.
The combination works well, and expresses
the casual quality of the area’s food and wine culture. Paired
with Shooting Star Sauvignon Blanc, whether served as appetizer
or dessert, you will enjoy three famous flavors from the
lake area, arranged together in perfect harmony.
Clear Lake Salad
Recipe:
- ¼ cup walnuts
- ¼ cup olive oil
- ¼ cup walnut oil
- ¼ cup raspberry vinegar
- salt
- pepper
- ¼ teaspoon Italian seasoning
- 1 large head butter lettuce
- 1 cup spring mix
- feta or blue cheese
- 2 pears
Bake walnuts at 350 for approximately
6 minutes or until lightly browned. Cool and chop coarsely.
Mix olive oil and raspberry vinaigrette,
adding the Italian seasoning and salt & pepper to taste.
Reserve 4 lettuce leaves for each plate. Mix shredded
butter lettuce and spring mix together in a bowl. Toss
the greens lightly with some of the dressing. Plate on
individual dishes, on a leaf of the butter lettuce.
Over the top of each plate, fan out 1/2
of a ripe pear, sliced very thin. Sprinkle with crumbled
feta or blue cheese and the chopped nuts. Drizzle more dressing
on the pears and salad.
Serve with either a Shooting Star Sauvignon
Blanc or Steele Viognier. Serves
