Cranberry Cornmeal Torte

INGREDIENTS
- 3/4 cup sugar
- 3/4 cup butter, softened
- 1 tablespoon vanilla
- 1 egg
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 1/4 teaspoons baking powder
- 3/4 cup fresh or frozen, thawed cranberries
PREPARATION:
Heat oven to 350�. Grease and flour a 9-inch springform pan.
In large bowl, combine sugar, butter, vanilla and egg; beat until well blended.
Lightly spoon flour into measuring cup; level off.
Stir flour, cornmeal and baking powder into first mixture until well mixed.
Spoon into prepared pan. Sprinkle with cranberries and press in lightly.
Bake for 40 to 45 minutes or until edges are golden brown. Place on wire rack to cool completely.
Serve torte with sweetened whipped cream. Makes 10 to 12 servings.
