Cyrus Opens at Les Mars Hotel
Cyrus, featuring “contemporary luxury cuisine” has opened its doors at the new Les Mars Hotel in Healdsburg, Calif. The restaurant is a joint project of fine dining veterans maitre d’ Nick Peyton and executive chef Douglas Keane and is named for Cyrus Alexander, the pioneer namesake of the neighboring Alexander Valley.
Cyrus is an intimate restaurant—only 65 seats—and designed to bring the feel of the French countryside to the dining room. The menu has strong classic French influences interlaced with contemporary, global accents. The prix-fixe format will allow each guest to choose three to five courses from any portion of the menu. A sparkling wine and caviar cart is presented at the beginning of the meal; an artisan cheese cart arrives at the end. Wine selections are broad-based and global with a focus on Sonoma County wines.
Peyton and Keane’s resumes includes stints at some of the finest restaurants in the country: Masa’s, the Ritz-Carlton, Jardiniere and Gary Danko in San Francisco and Lespinasse in New York City. The duo met at Gary Danko and eventually opened Market in St. Helena in the Napa Valley.
